At Joffrey’s we roast all of our coffees to order to ensure quality and freshness. But, there’s more to the coffee roasting process than meets the eye.
We consider the coffee roasting process to be a science AND an art form.
When coffee beans arrive at our facility they are ‘green’ – which is the way coffee beans are stored. They’re stored green because while in this state they will not lose quality or taste. Green coffee beans do not have the same characteristics as roasted coffee beans. In fact, they look, feel and smell completely different than the coffee bean you see when you receive your Joffrey’s. They actually look and smell like dried peas before roasting, nothing like what we have come to know and love about the smell of freshly roasted coffee.
Through roasting, coffee gets it delicious brown color and aroma. This is when the chemical changes take place within the beans as they are rapidly brought up to high temperatures and transforms the “green” coffee beans into what we know as roasted coffee. During the roasting process moisture dissipates, sugars break down, and the beans expand, releasing steam and CO2. In fact, all this happens in a window of 14-16 minutes depending on the degree of roast.
Once the beans reach the desired outcome, they’re quickly cooled to stop the roasting process. But this is harder than it sounds – there’s nothing that automatically tells the roasting machine when to stop. It’s all up to the Roaster themselves. During the roasting process, the Roaster will inspect the beans several times by taking a closer look and smelling and touching the beans to ensure they are roasted to the desired level.
It’s completely up to the Roastmaster to determine exactly when the roast has reached it’s perfect “profile” and the roast is complete. 5 seconds too early and you may have an underdeveloped coffee, 5 seconds too long and you may wind up with a batch of “unintentional espresso”. Because of the attention to detail needed, it takes many years for Roasters to train and develop the skills and ability to read beans
At Joffrey’s, we have two roast categories:
Medium – beans with a medium brown color, strong flavor and no oily surface.
Dark – shiny, almost black beans with an oily surface and slight bitterness.

Ever wondered how our Head Roastmaster Chris enjoys his coffee throughout the day? Wonder no more!
Join us for our first installment of a (coffee) day in the life of Roastmaster Chris and join him as he makes his way through the day, one cup of coffee at a time!
First things first, it’s important to always brew your coffee with fresh coffee. Roastmaster Chris prefers whole bean, but regardless of your grind preference, it’s recommended to store your coffee in an airtight container. Airtight containers are light, easy to keep clean, and feature an airtight vacuum seal. The seal helps to remove to oxygen so it can’t accumulate inside and stale your coffee.
After ensuring that his coffee is fresh, Roastmaster Chris starts the day with a cup brewed using a French Press. He prefers the French Press, as he feels this is one of the best ways to enjoy coffee and experience the true flavor!

Start with 2 oz. of coarse ground coffee.
You can adjust ounces to your taste preferences.
Coarse ground is recommended, as finely ground coffee can get stuck in the filter or result in a more bitter tasting cup.
Put coffee into French Press.
Wet the grounds with hot water.
Water should be 200 degrees, never boiling. If you do not have an electric kettle, bring water to a boil then let sit for 2 minutes to reach 200 degrees.
Do not use all the water, just enough to develop a “crust”.
Let sit for 30 seconds.
Stir to break the crust and finish pouring the remaining water in a circular motion. Fill to bottom of the upper band.
Put the top on, but do not lower the plunger yet. Let it steep for 4 minutes.
You may adjust the time to your taste preferences
Plunge slowly with firm pressure.
If you get an air bubble, pull up to break the vacuum then resume plunging.
You may also notice some fine sediment at the bottom of your cup. This is NOT the same as grounds! In fact, Roastmaster Chris encourages drinking the sediment as it is a natural part of the coffee.

Nothing says summer like iced coffee – but sometimes it’s so hot that ice just melts.
The only thing that makes an iced coffee a little less delicious is when it gets watered down! But what if it didn’t have to be that way? Now, it doesn’t! With coffee ice cubes!
Coffee ice cubes are easy to make, easy to use and allow you to enjoy your iced coffee without fear of the ice melting and watering down the perfect flavor. Simply use leftover coffee (or make a fresh pot!), pour into ice cube molds and place into the freezer for 24 hours. Once the cubes have frozen solid they can be used in place of regular ice cubes.
Less waste, more flavor, and the perfect brew for a summer day! What could be better?
